Roasted Cobnut & Chocolate Chip Biscuits

Family Recipe baked by me

St. Filbert's day marks the beginning of the Cobnut harvest and to celebrate I have made Roasted Cobnut & Chocolate Chip Biscuits. Made with dried cobnuts from Farnell Farm.

Makes 12

What you will need

  • 100g Cobnuts (Approx. 240g Cobnuts in shells)
  • 100g  Dark Chocolate roughly chopped into small squares
  • 170g Self raising flour
  • 1tsp Salt
  • 100g Caster sugar
  • 100g Butter
  • 1 Egg
  • 1/2 tsp Vanilla extract

  • Baking paper
  • Large baking tray
  • 2 mixing bowls
  • Wire cooling rack
  • Nut cracker

Pre-heat oven to 180c / Gas mark 4

To make the biscuits

  • Using a nut cracker remove shells from cobnuts
  • Chop cobnuts into small / medium size chunks
  • Lay chopped cobnuts onto a baking tray and roast for approx. 6 minutes moving every 2 minutes to ensure nuts do not burn. Once golden brown remove and leave to cool
  • Chop dark chocolate into small squares
  • Melt butter over low heat until melted, remove from heat pour into mix bowl and add caster sugar, vanilla extract and egg. mix until combined
  • In a separate bowl sift flour, and add salt
  • Fold liquid mixture into flour mixture until throughly mixed
  • Stir cooled cobnuts into mixture and once evenly mixed add chopped chocolate and stir again until evenly combined
  • Place desert spoon size discs (2cm thick) onto baking tray (leaving approx. 3cm space between biscuits)
  • Bake in the middle of the oven for 15 - 20mins until slightly brown.
  • Remove from oven and allow to cool on a wire cooling rack
